CHICKEN CHOW MEIN
2 whole
chicken breasts – or one whole chicken
2 onions
chopped
2 cups chopped
celery
4 cups chicken
broth
2 ½ tsp salt
3 tbs soy
sauce
8 tbs corn starch
¼ lb butter or
margarine
8 tbs cold water
2 cans bean
sprouts (drained well)
Cook
chicken breasts two hours.
Reserve
4 cups of broth for later.
Cut
up the chicken into large chunks.
Melt
butter in a pot and sauté onions until soft (steam about 5 min.)
Add
celery and sauté again until soft (steam about 5 min.)
Add
salt, broth, and chicken.
Simmer
about 15 min.
Add
bean sprouts and bring to a boil.
Dissolve
corn starch in water and add to chow mein stirring until thickened.
Add soy sauce and bring to a
boil. Shut off heat.
