ITALIAN TOMATO SAUCE
(Fast method)
Meatless:
2 - 12 oz cans
Hunts tomato paste
1 tbs chopped
garlic
3 tbs olive
oil
1 tbs dried oregano
2 tbs dried basil
2 bay small
bay leaves
Sauté garlic in olive oil until golden.
Take
off heat.
Add
tomato paste from 2 cans.
Fill
each can with water and add to paste stirring to mix completely.
Fill
each can with water two more times and mix after each addition.
(There
is a total of 3 cans of water to each can of paste.)
Return
to medium-high heat.
Stirring
add the dried seasonings and mix well.
Let
sauce come to a rolling boil stirring often.
When
it comes to a rolling boil, reduce to medium and boil for 15 min.
(Make
sure the sauce boils rather fast for this time.
Stir to make sure there is no sticking to the bottom.)
After
the 15 min of boiling, lower to a simmer for 1 hour.
Cover
partly. Never cover completely. (Gases
must escape so sauce thickens and looses its acidity.)
Meat Sauce
To
the above sauce you can add one or more of the following:
1)
Brown 1 lb of Italian
sausage on both sides in broiler. Add to
sauce when it begins to boil.
2) Brown 1 lb chopped beef and add to paste at beginning of meatless steps.
3) Brown meatballs in oil and add to sauce at beginning of boiling. (If meatballs are added, add and extra can of water since they absorb so much liquid.
4) Brown several chicken wings in broiler, and add to sauce at beginning of boiling. Chicken sweetens a tomato sauce.
