MANICOTTI

 

(Can be doubled)

 

BATTER  FOR  SHELLS:

4 eggs

2 cups flour

2 cups water

½ tsp salt

 

Beat eggs.

Add flour, water, and salt.

Beat well and fry like a pancake in a small cast-iron fry pan.

 

 

FILLING:

4 eggs (beaten)

3 lbs ricotta cheese

1 lb grated mozzarella cheese

1 cup Romano cheese

2 tbs parsley

 

Mix three cheeses.

Add parsley and mix.

Add eggs and mix well.

 

Roll about (two - three) rounded tablespoons of filling into each crepe.

Put into a sauce lined baking dish and top with sauce.

Bake at 3500 F for 50-60 min. (cover for the first 30 min.)
