OATMEAL  COOKIES

 

1 cup flour

¾ cup butter or margarine (1 ½ sticks)

2 cups oatmeal (1 min. fast cooking)

1 ¼ cups dark brown sugar

2 eggs

½ tsp cinnamon

1 tsp vanilla

½ tsp baking soda

½ tsp salt

1 cup raisins (white)

 

Sift together dry ingredients. (Set aside)

Cream butter and sugar together and beat until light.

Add eggs and beat again.

Add vanilla and blend well.

 

Add dry ingredients to butter mixture a little at a time and beat well.

 

Drop by heaping teaspoons onto a cookie sheet.

 

Bake 3500 F for 12-15 minutes.

Cool on rack and glaze with powdered sugar icing.

 

Makes about 6 doz. cookies.
