POLANTA
(FRIED CORN
MEAL PIZZA)
2 cups corn
meal
2 cups cold
water
2 tsp salt
2 cups boiling
water
dash of pepper
Mix
2 cups cold water with corn meal, salt and pepper.
Add
boiling water and cook over medium heat stirring constantly until the mixture holds
firmly together (about 5 min.).
Turn
onto oiled board and form into round cake with oiled hands.
Form
a hole in the center of the cake.
Fry
in ¼ “ cooking oil turning once until light brown on
both sides.
The
polanta can also be sliced into pieces and fried separately.
Serve
with soups or spinach or escarole with pepperoni.
