SLOPPY  JOE  SANDWICHES

 

Cabbage Dressing:

1 med head of cabbage (shredded fine)

1 large bottle of Thousand Island dressing

OR

Mayonnaise and ketchup mixed to make 2 cups

 

Add Thousand Island dressing (about ¾ of the bottle) to the cabbage and mix well.  Reserve the rest for preparing sandwiches.

Chill 1 hour.

 

 

 

SANDWICHES:

 

1 loaf of rye or pumpernickel (about 15 slices)

1 - 1 ½ lb sliced roast beef (deli)

1 lb sliced turkey breast (deli)

½ lb sliced Swiss cheese

 

Layer as follows: (makes about 5 large sandwiches)

 

Slice of rye or pumpernickel bread smeared with reserved dressing.

Slices of turkey breast and a slice of Swiss cheese.

Top with cabbage dressing.

Top with slice of bread smeared on both sides with reserved dressing.

Slices of roast beef.

Top with cabbage dressing.

Top with a slice of bread smeared with reserved dressing.

 

Cut each sandwich in half, cover with plastic wrap, and refrigerate several hours or overnight.  (Tastes better when left to sit a while.)
